College

Yes that's right - college. It makes baking a little difficult since ingredients cost 5 GAZZILION DOLLARS in Seattle. But I am planning on making some German donuts for work this weekend. I will definitely blog about the experience :-)

Cookies, Cookies, and More Cookies

I have YET to get around to making my peppermint bark....maybe I will get a chance tomorrow.

On the bright side, I have been asked to make cookies for my church tomorrow, a party for the music group next week, and my brother has already asked me to make him a birthday cake (in April, haha).

I must say, I quite enjoy this whole baking thing. I'm sure I've said that a million times, but it holds true.

Tonight my dad made Divinity (I didn't get the chance to learn unfortunately). It looks quite tasty, and I think I will try some too. Basically it's a mixture of sugar and corn syrup (oh so very good for you) that poofs up and makes these little white..dollops?...that just MELT in your mouth. Quite good I must say!

I discovered the BEST recipe for chocolate chip cookies the other day, I will definitely have to put it up tomorrow when I make some more!

That's all the baking news I can think of for now. Though my cousin will be hosting a fashion show to raise money for cancer research (if you haven't gathered, we have a great deal of personal family experience with this particular illness)in Richland this coming spring or summer. If it's before I go to London, I think I may drive down to Richland and contribute deserts for participants in the show.

Buttercream frosting

YUM. I attempted to make buttercream frosting today, and I must say I succeeded! It was verrryyy delicious! So much so, that I had to let my dad was the dishes because I couldn't stop sticking my fingers in the remnants, I thought I was going to make myself sick!

Haha, and oh how suprised I was at how SIMPLE it was!! Butter, Shortening, and Powdered sugar. Throw in a couple tablespoons of water and a teaspoon of vanlilla, and you're set to go!

I did have a little trouble frosting the cake. I don't really have the right kind of spatulas, and the cake was a little crumbly (this may be from using regular flow as opposed to cake flow (I didn't know there was a difference until after the fact)). All in all, the cake and frosting (and sprinkles) was a success. My poor family of guinea pigs all enjoyed the cake, as did I.

Next on the list: Still considering how to do peppermint bark. I need to get working soon though, while I still have unsuspecting neighbors and friends to unload all my goodies on! Haha.

My first cake (from scratch that is)

So, the title is pretty self explanatory I think! Haha, today I made a white chocolate cake from scratch. It took FOREVER to bake (partially because the power was flickering) but I think it turned out pretty good!

I made two eight inch cakes, tomorrow I'm going to attempt to make buttercream frosting from scratch as well, and make the two cakes one! After that, I'm on to attempting to decorate it. Luckily, I have a lot of family to pawn all my trail goodies off on, haha. Otherwise I think I might gain a lot of weight!!

Also, I think I am going to start making little fliers or something, offering to make some goodies for people that I know if they will make a donation to a cancer research fund. I am just going to make the fliers for now, haha, I still need more practice before I do that!

Whats cooking in the future besides frosting? I am going to learn how to make white trash (pretzels, applejacks, and nuts covered in white chocolate), and chocolate dipped pretzels from my mom. I also got some peppermint sticks to attempt some peppermint bark...we'll see how that goes.

I really want to get a silicon baking sheet (mostly for laying out melted chocolate, haha). I've been reading up on them, and they seem like a pretty good deal. We'll see though.

Welcome!

Hey there, and thanks for checking out Cakes for a Cure. This is a new idea for me, I'm just starting out with cake baking and the like. I'm really enjoying it, and I really want all my efforts to have some kind of a purpose! I really have a passion for cancer, especially children's cancer, and thought to "what a better way to use something I enjoy, then to help sick kids by making cakes"!?

So, on forth I go, seeing where this interest may lead. I started this blog to post pictures, recipes, thoughts, ramblings, whatever. I have been inspired by people using their unique passions to help find a cure, and I really hope to do the same here, and I hope you enjoy any treats you find!

So, for postage one, I discovered an EXCELLENT recipe for peanut butter bars (or something like that anyways, haha)

Basically, they end up tasting a lot like fudge with marshmallows, and took less then 10 minutes to prepare (freezing takes a bit longer, haha)!!!!


Here's the recipe:
1/2 cup butter
1/2 cup peanut butter
6oz butterscotch chips
6oz chocolate chips (I prefer the mini ones, they melt better)
1 bag mini marshmallow


First, line the BUTTER the bottom of your pan (any size works, the smaller the pan the thicker the bar). Trust me, this step is necessary to remove the bars!! Cover entire bottom of the pan with mini marshmallows (should use about half the bag).

In a separate, microwaveable, bowl, mix butter, peanut butter, and the majority of butter scotch/chocolate chips. Microwave for aprrox. 2 minutes (until melted), stopping every 30 seconds to stir the mixture.

Pour the melted mixture on top of marshmallow layer in pan, spread out evenly. Use remaining marshmallows & chips to sprinkle on the top of bars. Freeze until hardened (I usually leave it in for a couple hours, that way the bars are nice and solid). Remove from freezer, cut, and serve.


YUM!!! I had to write a note on top for the neighbor’s batch to keep my family out! Haha, I hope you enjoy as much as I do!!
